#bakedinmud is how we celebrate the creativity, cooking and styling of Mud Australia porcelain owners.

How to enter?

  1. Snap your culinary creation in Mud porcelain.
  2. Share your image via static post or story (static posts get bonus points!) and make sure you hashtag your image #bakedinmud and follow @mudaustralia on Instagram, private accounts please DM your image to our @mudaustralia account between 7 June – 5 July 2021.
  3. We’ll share your recipes and images on our social media channels as we receive them!

#recipe We have been whipping this up for a weekend brunch at home with a packet of our Cheesy Meatballs in Tomato Sauce. But it also makes a very easy lunch or dinner.


1 packet of our house-made Cheesy Meatballs in Tomato Sauce

Meredith Dairy Marinated Goat Cheese

2 free-range eggs

fresh herbs

bread to serve

The very simple way to make it...

Warm the meatballs either in their ovenproof packaging or in a saucepan

Add 3 meatballs per serve into a warm ovenproof serving dish

Carefully crack an egg into the middle of the bowl

Bake for 4-5 min

Add 3 goats cheese cubes to the sauce between the meatballs

Bake for an additional 4-5 minutes, until eggs are cooked to your liking and the goats cheese is warmed

Pop some parsley or basil on top, serve with bread, toast or a green salad.

An ordinary evening, late autumn. Afternoons are rainy, Christmas lights still far away. Moussaka is the national dish of my parent’s birth country. Growing up every Greek household in the neighbourhood had their own version of this quintessential Hellenic dish. Cinnamon scrolls with pink icing. Honestly best I’ve ever made. Dough was near perfect and they baked beautifully in my mudaustralia bakewear.

Pork loin is my favourite pork cut. Known as arista in Tuscany, it is often the star of my cooking classes. Now I tend to vary the menu as much as possibile, but during the first years I would rely on a simple, basic Tuscan menu which had the arista as the main course. This is also when I started dating tommyonweb.
I would invite him for dinner to eat leftovers from the cooking classes, believing it would be nice - it is cool to have a girlfriend who teaches cooking classes, isn’t it? There was always arista on the menu, though. My mum took me aside and explained me that I had to change menu if I wanted him to come back, as it was getting boring day after day to have always the same leftovers!
So I started picking different cut of meat, making Tommaso and my students happy!
Pork loin is so versatile, though, that you could cook it day in day out and have completely different dishes every time: roast it with the bone or without, with fresh herbs and olive oil, with apples and onions, with prunes and pancetta, or, one of my favourites, with prosciutto, pears and pecorino.

Went for a walk, there was a house that was being demolished and there was a tree had heaps of oranges. So I took a few and of course had to make an olive oil orange cake. The olive keeps the cake super soft , but doesn’t make the cake oily.

1 Cup all-purpose flour 
1/2 cup granulated white sugar
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1 Cup orange juice 
1/4 Cup yogurt 
1/4 Cup olive oil
1 teaspoon orange zest

1. Preheat oven to 180 degrees Grease the cake tin.Set aside.

2. Combine all dry ingredients together. 

3. In a bowl whisk together yogurt, olive oil, and juice. Whisk for about 5 minutes 

4. Add the dry ingredients into the wet ingredients and fold the mixture in. Do not overmix the batter.

5. Pour batter into the cake tin and bake for 40 minutes or till skewer comes out clean.

6. Once cool decorate with a glaze or dust with icing sugar. Enjoy x

Saturday night, very pregnant, eating Mac and cheese (although not Mac, but conchiglie). This is living! A mixture of parm, gruyere and Comte I was gifted from makerandmonger stirred into a white sauce generously spiked with nutmeg. Topped with sourdough crumbs fried in a little olive oil with garlic and rosemary !! Ate with some nice leaves dressed with a mustard-heavy vinaigrette 👌 #bakedinmud ...
